Chipotle Chicken Rice Bowl

    Ingredients

    • 3lbs of chicken thighs 

    • 6oz of Chipotle peppers

    • 1 can of water

    • Cilantro

    • Limes (2)

    • Guacamole

    • Pico

    • Onion powder

    • Garlic powder

    • Salt

    • Black Pepper 

    Directions

    Season thighs with onion powder, garlic powder, salt, and black pepper. Blend 6oz of chipotle peppers= 1 can on water (blend with water) use most of the blend on chicken. Into a hot cast iron, cook thighs on both sides about 4 min each. When cooked, pull it out and shop into bite sized pieces, cook rice + cilantro and rice to rice - serve with guac and pico on top
