Rice Dressing with Eggplant
Grandma’s famous Cajun side dish is a cherished tradition, lovingly passed down through generations. This Southern classic is an essential addition to every family gathering.
Ingredients:
- 2 lbs ground beef
- 1 lb fresh pork sausage, skins removed
- ½ lb dressing mix (optional)
- 5 tablespoons oil
- 2 fresh eggplants, peeled
- 2 large onions, chopped
- 1 large bell pepper, chopped
- 3 stalks celery, chopped
- 3-4 cloves garlic, chopped
- 4 cups of cooked white rice
- Green onion tops and parsley
- Salt and pepper to taste
Directions:
Add oil to heavy pot. Put in meats and start browning. Add onion, bell pepper, celery, and garlic. Saute about 10 minutes, Slice eggplants and add to pot. Cover and let saute until meats are sticking to the bottom of the pot, and seasonings are halfway cooked. Add about 2 cups of water, salt, and pepper. Scrape up residue from bottom of the pot. Cover and let simmer until meats and seasonings are cooked (about 40 minutes). Add onion tops and parsley. Sliced fresh mushrooms (sauteed) may also be added. Blend with cooked rice. Taste for salt and pepper.
